This is a berry muffin recipe created entirely by Jon’s dad, Chris. By replacing oil with applesauce and eggs with egg beaters, Chris has re-vamped berry muffins to one’s that won’t hurt your waistline. They are loaded with a variety of berries, which can be easily altered depending on your tastes and fruits you have on hand. They are very filling and nutritious, perfect for breakfast on-the-go or an afternoon snack. These will be your absolute FAVORITE for summer!

Berry Explosion Muffins
Yields 12 muffins


1 1/4 cups whole wheat flour

1/2 cup sugar (you could alter this too and use Raw Sugar)

1 tbs baking powder

1/4 tsp salt

2 cups All-Bran cereal

1 1/4 cups fat-free milk

1/4 cup egg beaters

1/4 cup applesauce

1/4 cup blueberries (or any fruit combo you want)

Handful dried cherries or raisins


1. Preheat oven to 400 degrees.

2. Stir together the dry ingredients: flour, sugar, baking powder and salt. Set aside

3. In a large mixing bowl, combine all-bran cereal and milk. Let stand 2 minutes or until cereal softens. Add egg beaters and applesauce. Mix well. Add dry ingredients, stirring until combined. Pour into muffin-pan.

4. Bake 20 minutes or until golden brown. Serve warm.
